Apple sponge cake recipe

Preparing this recipe takes approximately one hour, in which the ingredients to be used, preparation and cooking are arranged. Below are the ingredients, quantities and how to prepare it:

Ingredients

  • 2 Golden apples (medium-large).
  • 3 medium eggs.
  • 1 natural skimmed yogurt (125ml).
  • 3 measures of whole wheat yogurt (200gr).
  • 30 gr of granular stevia.
  • 1 tablespoon olive or coconut oil.
  • 1 sachet of yeast (16gr) and a pinch of salt.
  • Peach/apricot jam and water (for the final syrup).

Preparation mode:

Preheat: Turn the oven on to 180º

1.- Peel and chop the apples. Add them to a pot with a little water until tender.

2.- Reserve a handful of pieces to use later.

3.- Mash the rest of the apple until you obtain a creamy paste.

4.- In a container add the yolks, stevia and yogurt and mix very well until the ingredients are integrated.

5.- Using the same measure of yogurt, add 3 portions of whole wheat flour, yeast, oil and a pinch of salt and mix well.

6.- Add the applesauce to the mixture.

7.- In another container add the egg whites and beat until stiff. Add to the dough with enveloping movements.

8.- Add the apple pieces evenly into the dough.

9.- Pour the mixture into a greased mold. Bake at 180º for 35 minutes or until a toothpick comes out clean.

10.- Unmold, brush with a syrup made with hot peach jam.

11.- Let it rest until it cools, serve and enjoy.
