This simple cookie recipe with just two ingredients (banana and coconut) is a simple solution for sweet snacks that can be quick, healthy and use useful ingredients.

The recipe is original by Jorge Cabeza, author of a book of more than 100 healthy recipes and winner of the “Bake Off Spain” baking contest. Known in networks as Jorge Healthy She shares recipes and tricks with her more than 1.6 million followers.

Ingredients

  • 2 ripe bananas
  • 100 grams of grated coconut
  • Optional: 70% chocolate
  • Homemade jam

Preparation mode

1.- Remove the peel from two bananas, put them in a container and mash with the help of a fork.

2.- Once you obtain a smooth puree, add the 100 grams of grated coconut and mix until the ingredients are integrated. Something to keep in mind is that the riper the banana is, the sweeter it will add to the recipe. So, if you have bananas that are overripe and plan to throw them away, it is best to give them a second chance with this recipe.

3.- Preheat the oven to 150 °C.

4.- Form the dough into a ball and divide it into equal portions. Make balls.

5.- On a tray with kitchen paper, distribute the cookie dough.

6.- With the help of a spoon, press until a circle with a cavity is formed.

7.- Put in the oven for 12 minutes. Check that the cookies are toasted before removing them.

8.- Remove the cookies and set aside until they cool.

9.- This step is additional, but it gives the cookies an exquisite flavor. Add homemade jam to each of the cookies and then top with 70% melted chocolate.

10.- Let cool, serve and enjoy.
